Bravo for Brussels Sprouts
Mini-Cabbage Miracle

Mom was onto something when she made you eat your Brussels sprouts. These beautiful little gems are power-packed with health benefits. Brussels sprouts contain lots of fiber to battle “bad” cholesterol and enzymes known to have beneficial effects against certain kinds of cancer. These “mini-cabbages” boast high protein, anti-inflammatory constituents, minerals and lots of vitamin C, making this vegetable a bio-chemical miracle, able to detoxify your body and protect against cancer in the bladder, breasts, colon, lungs, prostate and ovaries.
To retain flavor, texture and health benefits of Brussels sprouts, simply cut off the stem and remove any bruised outer leaves. Score the stem with an “X” with a small paring knife and place stem-side down in a saucepan in a single layer. Pour broth or water in the pan and simmer about 5 minutes, until sprouts are bright green and crisp tender when pierced with a fork. Enjoy in your favorite stir fry, in a bowl of miso soup or with side of polenta or garlic mashed potatoes!
