Afternoon Pick-Me-Up
Amazing Energy Mousse

Is your head hitting the desk at 2 pm? Are the kids running circles around you in the middle of the day? Get out your blender and try this nutrient-filled brain kicker, designed to lift your energy during that afternoon “slump.” The main ingredient is avocados, which have lots of potassium and vitamin E for enhancing your brain function, as well as nutrients which leave your skin and hair glowing. This tasty energy mousse also provides mono-unsaturated fat, which is thought to lower cholesterol.
Put in a blender:
3 avocados peeled
1/2 cup coconut water
3 soaked pitted dates (soak them for 1 hour prior)
4 Tbsp of honey or agave nectar
4 Tbsp of organic cocoa powder
Blend until it becomes like pudding. Freeze, if desired, or eat on the spot for a decadent, and nutritional energy boost.

Three avocados? Wow, that's a lot. I like to put sliced avocado on homemade whole grain toast with healthy margarine -- Smart or Earth Balance. I only use 1/2 avocado for a big slice of toast, tho. Delish!
