Those Amazing Almonds

Make Your Own Milk

Almonds are not only loaded with nutrients, antioxidants, and important phyto-chemicals, they actually enact incredible changes in the body's chemistry. For example, eating a handful of almonds helps lower cholesterol by reducing homeocystein, the amino acid that leads to plaque build up in the arteries.

Here's a fantastic recipe for home-made almond milk, so nutritious it is used to replace mother's milk. It's perfect whenever, but especially for children with upper respiratory problems or ear infections. To make approximately 1/2 gallon, simply soak 4 cups of almonds overnight. In the morning, blend the almonds, the water they were soaked in, and four more cups of water. Strain the mixture through a cheesecloth and refrigerate. Warm it up before a meal or add a touch of agave nectar and pure vanilla for a little more flavor. Use it in smoothies, in baking, or as a refreshing pick-me-up in the middle of the day. Try it for yourself!

Your text advises using the water in which the almonds were soaked, yet your presenter clearly says not to use it. Which are you advocating?

Charleen & Gillian, Thanks for your questions. Here's our thoughts: Peels on or off is optional. If you're going to throw the pulp away, you might as well leave them on, as it's very time consuming to peel them. If you are going to use the pulp and don't like the peels, then go ahead and peel the almonds before blending. As for whether to use the soaking water or not, it's probably not harmful to use it, if the almonds are organic, but it may taste better if you use fresh, spring water instead.

I would say do not use the soaking water as it contains the enzyme inhibitors that the process of soaking the almonds was intended to remove. Rinse the almonds after you have soaked them and then use fresh water for the blending... CA, Santa Fe
